Long before gourmet street food emerged across Eastern Oregon, our original trailer lit its comal on the corner of Main Street. What started as an unyielding family promise over a decade ago has become a Hermiston cornerstone, sustained by authentic generational techniques and an obsession with quality.
We believe heritage is proven through discipline. From heritage corn nixtamalized and pressed fresh for every service to premium cuts slow-marinated for thirty-six hours in sun-dried chiles and citrus, every bite balances rustic lineage with culinary craft.

Fire-roasted meats carved fresh from the trompo, simmered in century-old heirloom recados, and wrapped inside fragrant, stone-ground heirloom corn tortillas.

Tacos al pastor are one of the most popular and reliable taco choices. They’re usually made with marinated pork that’s savory, slightly sweet, and a little smoky, with a bright, flavorful finish from the pineapple. The combination gives them a balanced taste that’s both rich and refreshing.

Tostada de lengua and tripa are both flavorful, traditional Mexican fillings that can be very good if prepared well. Lengua is soft, rich, and tender, with a mild beef flavor that feels especially comforting on a crispy tostada. Tripa has a deeper, more savory taste and a satisfying crunchy-chewy texture when cooked properly, which makes it a favorite for people who enjoy bolder flavors.

the grilled steak brings a smoky, savory flavor with a satisfying bite. When it’s made well, the meat is juicy and well seasoned, and it pairs nicely with rice, beans, salsa, and a warm tortilla that ties everything together.
Wow! We were driving home from fighting fires in walla walla area when we decided to stop at this spot for lunch. Let me tell you, my crew and I eat at a LOT of taco trucks. This truck ranked in top 3 for sure! We tried gorditas, enchiladas, and tacos. All delicious! Thank you guys, you're killin it 🥰

Drove around looking at different tacos trucks, they were all packed. Saw this one, barely any people and they have an area to sit and eat that has a roof to block the sun. Literally made my food in 5 minutes or less(4 tacos). They were nice and polite. My tacos were filled up good with lots of meat and it was very tasty and tender. The green sauce was so spicy haha! I usually get green because its less spicy so if you like spice, you'll love it. Ate it so fast, I forgot to take pictures!
